1. Grease a sheet pan, and lay out 7 of the tortillas. Slightly overlapping each other, with half of each hanging over the pan.
2. Prepare your Steak-Umm sliced steaks according to directions on the box, and sprinkling over the taco seasoning. Drain grease and sit aside.
3. Toss in red pepper and onion. Sauté. Pour in salsa and mix to combine.
4. Add back in the Steak-Umms and combine.
5. Add half of the shredded cheese over the tortillas on the sheet pan.
6. Top cheese with the meat mixture.
7. Add remaining cheese over the meat.
8. Add the last tortilla to the center of the pan over the cheese, and then carefully fold up all the sides.
9. Add another sheet pan over the top of the quesadilla, and place in the oven. (425 degrees for 15-20 minutes). Remove top pan, and bake uncovered for an additional 5 minutes until golden brown on top.
10. Let mostly cool before slicing and eating.
11. Serve with dips and toppings! Optional toppings: Sour cream, Salsa, Guacamole, Queso.
