1. Unroll one sheet of puff pastry dough onto a sprayed baking sheet.
2. Combine cinnamon and sugar, and then sprinkle over dough.
3. Lay out the second puff pastry sheet over the cinnamon sugar layer.
4. Using a knife, cut out the shape of a tree. Keep the leftover dough to make a star.
5. Make horizontal slices on both sides of the tree.
6. Twist each section a couple times.
7. Place the star on the top of the tree.
8. Brush the entire tree with a beaten egg yolk.
9. Bake at 375 degrees for about 20 minutes or until browned on top.
10. Let slightly cool before adding the Nutella on top.
