Indulge in these ultimate Piggy Mac Grilled Cheese Sandwiches, featuring a "dump and bake" mac & cheese as a key ingredient, layered with American cheese and cooked BBQ pulled pork, all grilled to golden perfection on Texas toast.
First, prepare the Dump and Bake Mac & Cheese: In a foil pan, combine the 2 lbs cheese product, 1 stick butter, 16 oz uncooked elbow macaroni, 4 cups whole milk, and season with salt & pepper to taste. Cook for about 30 minutes at 325°F (163°C), stirring every so often, until macaroni is tender and cheese is melted and bubbly. Let cool slightly.
Next, assemble the Piggy Mac Grilled Cheese Sandwiches: Spray a griddle attachment with cooking spray. Butter one side of a slice of Texas toast bread and place it butter-side-down on the hot griddle over medium heat. Quickly layer on slices of American cheese, then a generous amount of cooked BBQ pulled pork, and a scoop of the prepared mac & cheese. Top with another slice of Texas toast, buttered side up. After a few minutes of grilling, when the bottom slice is golden brown and crispy, carefully flip the sandwich and continue grilling until the other side is nice and toasty and the cheese is fully melted. Repeat for desired number of sandwiches. Serve hot with ranch for dipping.
